I've heard it can be done but can't figure out how.

well first of all you might want to play around with the tolerance so you don't select too little or too much, then be sure that contiguous is checked so you don't select all of the black at one time for instance- just one shape

btw- if there are words on a shape (such as photo or journaling), hold shift while you lasso those- to add them to your selection

then just go to the layer where your paper is and make it active (the marching ants will follow LOL) you can do select>inverse and then delete or control J to make a copy of that portion of the paper on it's own layer- then hide the original paper later and delete later when you're finished

you may want to expand the selection first if you want the papers to overlap and add drop shadows, you can control T and drag a corner a tad while holding shift or in the top options bar change the width and height percentages to 102% or so

do this for each shape :)
