Really you can cook anything in cast iron that you would cook in a normal pan. Do you have a skillet or a dutch oven? One of my favorite recipes in cast iron is Chile Verde. Really easy.
__________________Cube 2 lbs. pork tenderloin Add 2 tbsp. chili powder 2 tbsp. cumin 1/2 to 1 tsp. cayenne pepper Fry in a couple of tablespoons of canola oil in dutch oven. Add in 1 large can green chile enchilada sauce (I like La Victoria) and 1 large can of diced green chiles. Let it simmer on low for an hour or two. Top with shredded mozzarella cheese. Serve with warm gordito-style tortillas. |

I think they are also called sizzle plates. I don't have any, but I love getting fajitas on them when we go out - everything stays so hot.

You're going to love cooking on cast iron! I have my grandmother's skillet, her cornbread loaves pan and a sizzle plate. The sizzle plate is great to use on your outside grill to grill fish filets. We do grouper & red snapper alot of weekends.
__________________Let the pan heat, pour in a little olive oil, move it around to coat the bottom and get hot. Season the filets and let them cook for a few minutes- depends on filet's thickness whether or not they even need turning. MMMM....enjoy! Be sure to remember to use an oven mitt, that handle gets hot. (I can vouch for that the hard way.) |
