Default NSBR - Ham sides???

Seems like I go through this every time I decide to do a ham. What traditionally goes with it? Here's what I'm planning ... sweet potato casserole with pecans (requested by my kids), mashed potatoes (requested by hubby), corn (requested by kids), green salad, rolls

What am I missing? Something .. and color-wise, I'm not happy. Brown, orange and white and yellow.... need something cheery bright on the plate!

Dessert will be Rachel Rays fabulous pumpkin Praline cake, and I cheated a bit on appetizers and bought pre-made stuff (breaded shrimp, shrimp cocktail, mozarella sticks and will make some deviled eggs)

Green beans? I always serve green beans with ham. I used this recipe the other night...delicious!


Green Bean Bundles
Recipe courtesy Paula Deen

1 pound fresh green beans
Olive oil
Salt and pepper
Bacon

Preheat oven to 350 degrees F. Blanch green beans for 3 minutes. Toss them in olive oil and salt and pepper. Bundle about 5 green beans and wrap a piece of bacon around the bundle. Place in a roasting pan and roast for 10 to 15 minutes, until bacon is cooked.

How about strawberry-pretzel salad? It's definitely bright and cheery (fire engine red!!) and delish!! If you need the recipe, just LMK, and I'll post It is a must-have at our holiday gatherings. The combination of salty pretzels, sweet jello, and cream cheese is to die for

Hmm... sounds like something my kids might really like!

And I tried the green beans idea but noone was buying it. Hate to make something just to throw it away!!

Anyone have any easy tamale recipes (i.e., cheating ones??) We might have a young guy over who I'm guessing based on where he's from has had them traditionally ....

Pineapple always goes great with Ham!

Baked Pineapple Bread Pudding

4 eggs beaten
1 c sugar
1/4 c butter, melted
2 T flour
1 can crushed, undrained pineapple
4-5 slices white bread, cubed

Combine first 5 ingrediants; add bread cubes. Pour into 1/2 qt. casserole dish. Bake 1 hour at 350 degrees.

We usually serve au gratin potatoes and green beans. A green salad with tomatos and red peppers will add some extra color. You could also do a side of deviled eggs and sprinkle them with paprika for some color.

Our must have with Ham is Brocolli Cheese Rice Cassarole! That doesn't help you out much color wise though....

haha! Yeah right - - very labor intensive! I have homemade ones nicely vacuum packed in my freezer though.

Hey hey hey, where are you getting them??? C'mon, give me a cheat!

And what cut of meat do I get in town for these (or any pork-based tex-mex stuff)? This is one of my difficulties here. I used a very cheap bone-in pork roast in the States, but haven't found one here (and what's it called in Italian so I can ask the butcher???) The commissary got me in one but it wasn't what I wanted at all, very stringy and not so good.

OMGosh, I had this last night, it was SO good, I had to ask for the recipe. Its VERY easy, and its red... maybe just the color you're going for, LOL!

Cranberry Salad

2 pkgs. of 3 oz raspberry jello
1 can of jellied cranberry sauce
1 1/2 cups of boiling water
2 cups of softened raspberry sherbert
1 TBS of lemon juice

Mix Jello and boiling water. Then add cranberry sauce. Use a potato masher to mash it all together and mix well. Let set in fridge for 20-30 minutes. Do not let it get thick. Take out of fridge and put sherbert in. Stir, and then pour in mold or serving dish. Can garnish with cranberries before serving.

HTH! Like I said, I seriously could have eaten this whole dish last night!
